Beefy Zucchini Soup

The Fresh Zucchini Salsa just begs to be turned into soup. But you can use this technique any time you have cooked leftover vegetables, roasted peppers work, as do roasted roots! The addition of a few simple ingredients makes it hearty and filling in no time flat.  Feel free to substitute ground chicken and chicken broth, same dif.

Serving Size  4     Preparation Time 10 minutes

½ pound extra lean ground beef

2-3 cups Reserved Fresh Zucchini Salsa

1pint low sodium beef broth

Empty lean ground beef into a large skillet and brown until cooked through, about 6-8 minutes.  Drain off all fat.  (if you are really keen, you can remove even more fat by running it under hot water through a colander!) Stir in beef broth, reserved Fresh Zucchini Salsa and warm through.  Serve with whole grain bread and a nice big salad.
