White Bean Wonder

The humble tin of white beans is a useful, healthy tool.  This is an excellent, utterly simple side dish that has endless combinations and is a perfect accompaniment to any meal but particularly our Roasted Tofu dish. It is especially useful when you have vegetarians for dinner.  The rest of the gang can have the meat and veg with beans in place of potatoes or rice. The vegetarians or vegans are happy to make this their main.

Serving Size 4    Preparation Time 04 minutes

1 tablespoon  extra virgin olive oil

4  cloves garlic

1 tbsp mild chili powder

2 can white kidney or navy beans, cooked

1  tablespoon honey mustard

Warm a large skillet over medium heat with olive oil.  Stir in garlic and cook over medium-low heat for 30 seconds, stir in chili powder.  Drain liquid from beans and reserve few tablespoons. Add beans and liquid to pan and cook for 1-2 minutes. Stir in honey mustard.

Set aside:

Divide in half reserving some beans for White Bean Burritos

    This looks fast and easy! Question…in the ingredient list you call for chili powder, but in the directions you mention curry. Which one is it? I plan on making this one soon! Thanks!
