Roasted Tofu Week

Don’t give me that! Come on, try it. Going meatless once in a while is a wonderfully delicious way to help your health and that of the planet.  Try out this roasted tofu week and toss some fish or chicken into the oven in a separate pan that way, you can please everyone in a very low stakes kind of way.

Weekly Shopping List





3 tbsp butter 2 onions 1 T cane sugar
16 oz firm tofu 1 red pepper 1 t sesame oil
1 c grated cheddar 3 zucchini 2T sweet chili sauce
4 mushroom caps 1 T rice vinegar
2 carrots can chick peas
romaine lettuce Braggs liquid amino
1 avocado or soy sauce
lime x virgin olive oil
fresh mint chili powder
2 cans white beans
honey mustard
ww flour tortilla
salsa verde
roasted red peppers

I love food, try to watch my weight, know more than I want to about healthy living (sometimes I wish I knew less so I wouldn’t feel so guilty when I stumble), am a daughter, sister, friend, mom and wife who worries and scurries the meals onto the table.
