Slow Cooker Pulled Pork

I do love sneaky vegetables. They think they are getting saucy pulled pork sandwiches but you and I know they are actually getting a full serving of  the super vegetable, pumpkin as well as the tomatillos in salsa.

Serving Size  : 8 pulled pork sandwiches   Preparation Time  15 minutes

1 cup barbecue sauce

1 cup tomatillo salsa or salsa verde (mild)

28  ounces  canned pure pumpkin

1/2  teaspoon white pepper

1      teaspoon  dried thyme

2      teaspoons  chili powder

1 1/2  kilograms   boneless pork sirloin /boneless  pork rib roast

whole grain buns

Combine all ingredients in a 6 quart slow cooker and stir well. .  Turn on to high for 1 hour then down to low for 4-6 hours.

Serve with The Mexican version of Versatile Sticky Brown Rice and salad.
