Grilled Shrimp with Quinoa & Roasted Peppers

Chimichurri Shrimp

This meal uses the very versatile Chimichurri sauce.  Chimichurri has its roots in Argentina and is traditionally served with grilled meats.  Similar to an Italian pesto, but without the nuts and cheese, this condiment stores well in the fridge and will knock your taste buds into high gear! Use it to marinade the shrimp, use leftovers on top of grilled meats, vegetables, stirred into pasta or as a sandwich spread.  I tend to eat it by the spoonful, its addictive and it keeps the vampires away!

  • 24 Peeled and deveined jumbo shrimp (16-20 count) uncooked (16 for this meal, 8 for second meal)
  • 3 Tbsp chimichurri sauce
  • Skewers
  1. If using bamboo skewers be sure to soak for at least 1/2 hour.
  2. Combine shrimp and chimichurri and stir well.  Thread shrimp on to skewers and place in fridge until ready to grill.
  3. Place skewered shrimp on Medium-High heat grill pan or BBQ and cook for 3-4 minutes per side


  • 2 cups Quinoa
  • 3 cups water (or stock)
  1. Rinse Quinoa under cold water. Combine in a medium saucepan, bring to a boil and reduce the heat.  Cook for approximatley 15 minutes or until liquid is absorbed.  Turn off heat and let rest 5 minutes. Reserve half cooked quinoa for another meal, stored in fridge.
  • 1 Orange Bell Pepper
  • 1 tsp olive oil
  1. Cut pepper into wide strips and brush with olive oil.
  2. Place on grill with shrimp and cook until tender crunchy!

Second supper tip: Use leftover quinoa to make Mediterranean Quinoa Cakes (you are halfway to another great meal!)

Second Second Supper Tip: Grilled Shrimp can become Shrimp Tacos!
