Mediterranean Quinoa Cakes

Quinoa (keen-wa) for me is a pantry staple.  Although it has an odd sounding name, it is as easy to prepare as rice and contains good amounts of protein! Whenever I make it, I always make double so that I can use it for a second meal.  The beauty of this recipe is that once you get the basic recipe down, you can add whatever flavours are your favourite.  Here we use bold Mediterranean flavours to satisfy.  You can serve these with a simple side salad, or for a twist consider using the quinoa cake as a base for a poached egg!

Mediterranean Quinoa Cake

  • 2 cups cooked quinoa
  • 1 large egg, beaten
  • 1/2 cup bread crumbs (use almond flour for gluten free)
  •  2 green onions sliced thinly (green and white)
  • 2 Tbsp sun-dried tomatoes, roughly chopped
  • 8 basil leaves, roughly chopped
  • 1/2 cup bocconcini cheese, roughly chopped
  • 1/2 tsp sea salt, 1/2 tsp black pepper and 1/2 tsp cayenne

 

  1. Place all ingredients in a large bowl and stir well to combine.  This is important as the mixture must stick together.
  2. Use approximately 1/2 cup to form a compact cake.
  3. Heat a frying pan over medium heat, add 1 tsp olive oil
  4. Place quinoa cake in pan and cook about 4-5 minutes per side, until golden brown.
  5. Top with a dollop of Greek Yogurt

Tip:  If you are really pressed for time, simply stir in 3 Tbsp of chimichurri sauce to the quinoa, egg and breadcrumb mixture -for flavouring!
