Savour the Taste of Summer

Warm Village Salad and Grilled Chicken

Well, we are well into September, back to school, back to routine, but really we have 2 weeks of summer left!  Although I feel the inklings of the fabulous fall flavours seeping back into my tastebuds, I figured why not savour the last few morsels of summer goodness.  Local tomatoes and cucumbers are still around and the BBQ is not ready to be ignored.  This end of summer recipe showcases a familiar dish in a unique and delicious way.  Warm village salad is a perfect transition recipe to utilize a late summer harvest and keep you warm in the cool evening.


Warm Village Salad

  • 2 cucumbers, cut into bite sized peices (peel if waxed)*
  • 4 tomatoes, cut into bite sized peices
  • 2 small red peppers, cut into bite sized pieces
  • 1 small red onion, peeled, halved and sliced
  • Handful of black pitted Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 Tbsp olive oil
  • Juice of half a lemon
  • 2 cloves garlic, minced
  • 1 tsp dried oregano

*I had cooked cucumbers in Quebec last summer, and although  I thought it odd, I soon found out that they were delish!

Note:  Reserve half the cucumber, tomato and red pepper and onion in a container for a second supper, Ready to go Veggies.

  1. Lay out a sheet of aluminum foil (enough to house all the ingredients)
  2. In a bowl toss together cucumber, tomatoes, red peppers, onions, olives, feta, oil, lemon, garlic and oregnao
  3. Place mixture on aluminum foil and fold together to seal
  4. Place on BBQ and cook for 15 minutes (375 degrees is ideal)

Serve with grilled chicken or fish.
