Festive Fennel Salad!

Christmas is my favorite time of year, the gathering of friends and family, the recalling of years past… and the food!  It seems like there is an endless stream of  holiday buffets, filled with rich and lavish treats that only come around during this festive season.  What I love about the food over the holiday’s is that most people  put effort into making their favorite dishes from scratch.  Whether its Grandma’s famous shortbread cookies or Mom’s liver pate,  these recipes help connect us through the years and make holiday meals so special!

Typical holiday buffets include  heavy foods like turkey, roast beef, root vegetables and green beans, all doused with butter, sour cream and other rich adornments.   Although I love these foods as much as the next person,  I am elated when something fresh and healthy shows up on the buffet table.  More often than not, I am the one supplying this type of dish!  Along with my favorite Kale Salad, here is a dish that is the perfect contrast to all the deliciously rich holiday fare!

  • 1 Fennel Bulb
  • 1 Large Orange
  • 1/2 cup Pitted Kalamata Olives
  • 1/4 cup Shelled Pistachios
  • 1/4 cup Pomegranate Seeds
  • 3 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp  Cranberry Fruit Condiment
  • 1/2  tsp sea salt
  1. Trim the green top off the fennel bulb.  Cut fennel in half and remove core.
  2. Slice the fennel into thin pieces.
  3. Peel the orange and slice into rounds.
  4. Whisk olive oil, cranberry fruit condiment and sea salt in a large bowl.  Add  fennel to the bowl and toss.
  5. Place fennel on a white platter, top with orange segments, olives, pistachios, olives and pomegranate seeds.

Voila an amazingly festive and equally delicious and healthy side dish! Enjoy!
