Pumpkin Bread


I am always looking for ways to work in pumpkin because it is a tasty, brainlessly adaptable canned of healthy.  This bread is moist and spicy and full of comfort.  Nothing like it with a hot cup of chai tea on a cool day.


1 cup oatmeal

1 cup warm water

2 cup whole wheat flour

¼ cup dry milk powder (instant or non-instant)

1 Tablespoon baking powder

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 cup amaranth flour or ground almonds

1/4 t. ground cloves


2 egg whites

1 egg

1/4 cup applesauce

1 cup honey

3/4 cup canned mashed pumpkin


In a large bowl, mix oats and warm water. Let stand 3 minutes. Meanwhile, measure and mix dry ingredients. Beat egg whites, egg, applesauce, honey and pumpkin into oat mixture until smooth. Fold dry ingredients into oat/egg mixture.

Pour into greased 9″ x 13″ or larger pan. Bake at 350°F for 20-25 minutes, or until a toothpick inserted in center comes out clean. Let cool 5 minutes before removing from pan.

    I think there is a typo on your page describing the pumpkin bread.
    Should it be moist and not most.

    This looks great, and I want to try it. One question, though — do you mix the dry ingredients in with the oatmeal, or mix when all the wet ingredients have been blended? thanks.

      Fixed the recipe, thanks for the 2nd pair of eyes! Mix the dry ingredients into the oats and eggs once they are mixed together. Enjoy!
