Carrot Ginger Slaw

Most nights I am pressed for time,  trying to feed the family before we run off to hockey or band practice.  This is why I love coleslaw in a bag.  I can use it for so many things including stir frys, soups or plain old slaw,  and it goes well as a side dish to almost anything.  The cabbage is fantastic, but for a change of pace I love the pre-shredded carrot and broccoli slaw! It is usually available in the produce section right along side the traditional coleslaw mix.  With a few simple additions this sweet slaw  turns into a gourmet side dish!  Carrots are sweet and so the balance of the spicy and sweet candied ginger is a perfect match.  Add a little nutty flavour via the pecans and you have a side dish anyone would be proud to serve.  The best thing, it takes under 10 minutes to throw it together!

Carrot Ginger Slaw with Pecans

  • 3 cups of pre shredded carrot slaw
  • 1/2 large apple cut into bite sized peices
  • 1/2 cup chopped pecans
  • 1/4 cup chopped candied ginger
  • 1/3 cup mayonaisse
  • 3 Tbsp Rice Vinegar
  • 2 Tbsp minced dill (basil also works well)
  • 1/2 tsp salt
  1. Place carrots, apples, pecans and candied ginger in a medium bowl
  2. In a seperate bowl combine mayonaisse, rice vinegar, dill and salt.
  3. Pour dressing over carrot mixture and mix well.
  4. Serve
