Asparagus and Potato Flatbread


This flatbread is a delicious version using pre-made pizza dough from your grocery store.  The great thing is that you can get two flat breads out of 1 pound of dough.  Making this version for the adults then topping the second one with whatever topping your kids like. Serve this flatbread for a snack or as a hearty side with lunch and dinner.

Tip: Be sure to buy thicker stalks of asparagus as it allows easier peeling into thin strips.

Ingredients (Makes 2)

  • 1 package of fresh pizza dough, divided into two
  • 1/4 cup olive oil
  • 1 Yukon Gold Potato, sliced as thin as possible
  • 1 lb Fresh Asparagus (thick stalks), washed and trimmed.
  • 3/5 cup grated Gruyere cheese (or smoked cheddar or crumbled goats cheese)
  • Salt and pepper


  1. Preheat Oven to 500 degrees
  2. Using a vegetable peeler, peel strips of asparagus until its all in  fine ribbons, set aside.
  3. Stretch each peice of dough into a large oval and brush with olive oil, season lightly with salt.
  4. Place on a parchement lined baking sheet.
  5. Drizzle potatoes with 1 Tbsp olive oil and divide evenly between each dough, season lightly with salt.
  6. Place in the oven for 12 minutes or until edges begin to brown.
  7. Reduce temperature of oven to 450
  8. Toss asparagus with 1/2 Tbsp olive oil and season with salt, divide evenly between both flatbreads and return to the oven for 7 minutes.
  9. Remove from oven and sprinkle cheese over each flatbread and return to oven until melted.
  10. Cut into pieces and enjoy!
