Grilled avocado

Every summer barbecue needs a little unexpected fun.  (Preferably not the neighbor stumbling shirtless around the backyard mowing the lawn, ikk) Avocado doesn’t get much time in the spotlight in anything other than guacamole but have you thought about grilling it? The high fat content means that the centre melts and oozes  beautifully and the flavours get richer.  Toasting some corn to make it pretty is a simple but special step.

Serving Size  : 4     Preparation Time  5 minutes

2  avocados
2 cups  frozen corn
1 tablespoon  extra virgin olive oil

Slice avocado in half and remove the pit. Preheat BBQ to medium high heat

Place corn on a baking sheet on bbq an roast for 5-8 minutes with the lid down, stirring often

Remove corn from grill when toasted and browned. Turn grill up to high heat.

Place avocado, cut side down on grill for 2 minutes, turning once.

Use avocado as a bowl and scoop corn into and around. Drizzle with extra virgin olive oil and serve as a side dish.
