Best Ever Low Fat Yogurt Dip


I use this stuff as veggie dip, dolloped on boring baked fish or chicken for a little zip, as a side dish to  spicy food, as a bread spread….sometimes, the tiny drips a the end of a batch, I mix in rice vinegar and make it a salad dressing.  This is one hard working 2 minute recipe.

1/2 English cucumber

1 cup Greek yogurt, plain

1 tsp dried dill

1/2 tsp garlic powder

1 tsp Dijon Mustard

Grate cucumber, skin on, into a strainer. Squeeze and let sit to allow as much water as possible to drip away.

Mix remaining ingredients together.  Stores in the fridge up to 5 days.
