Cheater Spinach and Cheese Risotto
More and more frequently I find myself out during the late aft, early eve. Leaving my ravenous teen to fend for herself after school and extra curriculars.
I need a few vegetarian meals that make themselves and serve her pronto!
This one is my new fav because the lentils disappear to create a creamy, risotto like dish. Perfect as a veg entree or a side dish with fish or chicken.
1 cup short grain brown rice
3/4 cup red lentils
1 litre vegetable stock
2 cups baby spinach
1 cup grated cheese
1 tsp oregano
Pinch chili powder
Place rice, lentils and stock in rice cooker and turn on high. Before serving, stir in remaining ingredients.
