Easiest Ever Egg White Omelet

This 100 calorie, single serving breakfast, lunch or dinner can be pulled together in a separate pan no matter what else is going on for meals in your house.  It is my go to hunger killer, energy provider with 16 grams of protein.  For breakfast it goes with tea and toast, lunch it goes with soup, dinner it goes with with a big ol’ salad and a happy glass of wine. Simply by switching up the salsa, I can make it a whole new flavor.

 

4  egg whites (the carton product is easiest, just whites, not the egg beaters!)
2  tablespoons  salsa — any flavor
2 teaspoons  grated cheddar cheese
1  cup  arugula

Preheat a small cast iron skillet over high heat, pour a teaspoon of oil in and wipe out with a paper towel.

Pour egg whites into pan, top with salsa and cheese.

Cover and turn down to low-medium heat to cook through 5-6 minutes.

Top with arugula and remove from pan.
